Coconut Tres Leches Deliciousness

So, I baked a Coconut Tres Leches cake for my boss' birthday and it was pretty much a huge hit at the office. The best part of it all is that it was super easy! Here is the recipe...


1 package of Yellow Cake Mix

1 (14oz) can condensed milk

1 (15oz) can Coco Lopez Cream of Coconut

1 2/3 cup sweetened flaked coconut

1 tub Cool Whip

Maraschino cherries (optional)

Prepare cake mix according to the instructions for a 13 x 9 inch cake. While still warm poke small holes all over the cake using a bamboo skewer or small kitchen knife. Top with the condensed milk. Mix cream of coconut in a separate bowl to smooth any lumps. Top cake will cream of coconut. Ice cake with Cool Whip. Sprinkle the coconut and top with a cherry.
